Why Mundo de Agave?

We created this experience to foster a true exchange of knowledge and culture, with Mexico at its very heart. Here, every moment revolves around uncovering Mexico’s deep-rooted ingredients, processes, and traditions. This trip takes us into the vibrant world of indigenous Mexican corn through a close partnership with Nejayote Molino and La Casa del Maiz. Together, we are learning about Mexico’s astonishing variety of native corn species, exploring how this iconic ingredient has shaped ancient and modern gastronomy, and understanding its significance from cultural, religious, agricultural, and community perspectives.
